What was your first food epiphany?

Coq au vin when I was 6. My Uncle Jim made it. He nearly set the kitchen on fire. Coolest thing I had ever seen.

What are your five favorite cookbooks and why?

Escoffier, Julia’s “The Way to Cook, ” Culinaria Spain, Irena Chalmers “Good Old Food, ” and the Joy of Cooking. They’re all about foundation, about technique, which frees the cook to be creative

What are your three favorite recipes and why?

I rarely ever use recipes except as inspiration, a sort of a “hey that’s a good idea, but what if I did this and this instead?” kind of thing

What are your three favorite tools in the kitchen?

My hands, my 10″ Wusthoff, and my garlic peeler

What concerns you most about food?

The industrial standardization of flavors, the people who mistake frenzy for efficiency and are willing to settle for expedient mediocrity, and the wrongheaded belief that good food is only for the rich
