Coq au vin when I was 6. My Uncle Jim made it. He nearly set the kitchen on fire. Coolest thing I had ever seen. |

Escoffier, Julia’s “The Way to Cook, ” Culinaria Spain, Irena Chalmers “Good Old Food, ” and the Joy of Cooking. They’re all about foundation, about technique, which frees the cook to be creative |
| What are your three favorite recipes and why? |
I rarely ever use recipes except as inspiration, a sort of a “hey that’s a good idea, but what if I did this and this instead?” kind of thing |

| What concerns you most about food? |
The industrial standardization of flavors, the people who mistake frenzy for efficiency and are willing to settle for expedient mediocrity, and the wrongheaded belief that good food is only for the rich |
| If you could give your best friends--or children--one piece of advice on anything food related, what would it be? |
The closer the source is you your kitchen door, the better it will taste on your plate. Know the farmer, know the food. Oh, and if it wasn’t food 100 years ago, it isn’t food now. |
