Lia’s carnitas look great. Can’t wait to try them!

Jennifer, I’m embarrassed to say that I just stick the pork shoulder in the slow cooker and pour in some (preservative-free! high-quality!) salsa verde and a little water. Cook on low all day, until the meat falls apart. Shred, and tuck in warm tortillas w/ your favorite fixings. My friend Jess did this with beef stew meat, and I tried it with pork, and it works just as well.

Jennifer . . . heh, heh, heh, guess who wrote that Recipe for Cooking Light? (Lia Mack Huber, Cooking Light, SEPTEMBER 2007). Glad you liked it! ;-)

Are you looking for these? http://nourishnetwork.com/2009/12/07/carnitas-de-lia/ They’re awesome in tacos.

I made this fabulous beef stew using my slow cooker (recipe includes slow-cooker directions).

Lots of beans and bean soups, split pea soup, pot roast, pork shoulder for soft tacos (those are so good and so easy).

I was at the Hotel Triton in San Francisco two weeks ago and they had a slow cooker out on their wine bar and it was filled with nuts. I mean, how lovely is it to sit around drinking wine and nibbling warm nuts? (Ans: very lovely.)

We’ve got a discussion going on quick-cooking pressure cookers; this one’s for the slow-cooker route. What do you make with yours?
